Alice Springs Chicken
This is one of my favorite meals from a local restaurant.  Of course I had to recreate it!  It’s just as delicious at home!!

 lb chicken breast boneless skinless (cut into four pieces)
Honey Mustard dressing
8 pieces bacon, fried
1/2 tsp McCormick Season All
1 cup sliced mushrooms (canned or in a jar) drained
2 cups shredded Colby/Monterrey Jack cheese (2%)

Rub chicken breast with season all and set aside to marinate for 1 hour.

Saute' chicken on medium heat in pan with just enough oil to prevent sticking. Cook on both sides until a slight golden and cooked in the middle (but not dry) Remove from pan.

Spoon honey mustard over chicken breast, cover with a layer of mushrooms, two slices of bacon and then sprinkle with shredded cheese. Pop in heated oven until cheese melts. (microwave will work well also)

Serve extra honey mustard on the side.

Honey Mustard
1/2 cup yellow mustard
1/4 cup honey
1/4 cup light corn syrup
1/4 cup mayonnaise
Blend all ingredients until smooth and free of l umps. Adjust the corn syrup according to taste.
