Fish and Chips




To make the 'fish'. I used cod. Flounder would also work, as would pretty much andy white fish.

To bread the fish I had dipped the fish in three mixtures.
In bowl number one was flour (I used whole wheat, naturally) with salt and pepper to season.
In bowl number two was an egg beaten
In bowl number three was panko (japanese bread crumbs) mixed with herbs. I only did parsley today. (But use whatever you like)

Dip the fish in each bowl and thoroughly coat.

In a skillet heat 2 tbs of butter and 2 tbs oil. When hot, place fish in oil/butter mixture and cook on both sides until golden brown (about 5-7 minutes on each side). Remove from pan and serve immediately. (Todd ate the leftovers the next day and said that it actually retained it's crunchiness overnight in the fridge!)

The chips.....
Peel and cut potatoes into french fry shaped pieces. Soak in sugar water for about 10-15 minutes. Coat with olive oil and place on baking sheet. Sprinkle with paprika and bake for 45 minutes (or until golden brown), turning halfway through the baking time
