Summer Salad

Summer Salad


This is an amazing dish!   The servings are substantial in size and it is packed full of protein and nutrition!  I have used it as my main dish and as a side dish! 


15 oz can black beans
15 oz can pinto beans
15 oz can kidney beans
(rinse and drain all of the beans)
15 oz bag frozen sweet corn kernels
small chopped red onion
2 chopped garlic cloves
2-3 chopped bell peppers (using different colored ones makes the salad prettier)

The dressing:
1 tsp ground pepper
1 tsp salt
1/4 cup canola oil
1/2 cup red wine vinegar
the juice of two limes

Combine the top ingredients together in a large bowl.

In a small bowl whisk together the dressing ingredients. Pour dressing ove rhte salad and toss together.
